The ingredients needed to make Muthiya (from bottle gourd):
- Take 250 gms lauki(dudhi)
- Make ready 1/4 cup jowar flour
- Get 1/4 cup whole wheat (grainy texture)
- Take 1/4 cup besan
- Get 1/4 cup maize flour
- Make ready 3 tbs paste of ginger,garlic,chilli and coriander
- Take 2 tbs curd
- Take 1 tsp turmeric powder
- Prepare 1 tsp cumin powder
- Prepare 4 tbs oil
- Make ready 3 tbs seasame seed
- Get 6/7 green chillies
- Prepare Pinch hing
- Prepare leaves Curry
Measure it and keep it aside. Then in a bowl mix wheat flour, besan, semolina, turmeric powder, asafoetida, baking soda Then squeeze out as much possible water from bottle gourd and onion. Use your all strength to squeeze out water. Take handfuls of the shredded bottle gourd and squeeze out all the water from it and set aside.
Steps to make Muthiya (from bottle gourd):
- Grate lauki (bottle gourd).
- Add ginger,garlic, green chilli and coriander paste, and all flour.
- Now add salt,turmeric, cumin powder, curd and sugar(I didn’t add).Knead dough and make cylindrical shape..
- In a vessel add water and put one plate on stand with wholes as shown in pic
- Allow the water to boil and then put those cylinders on it and steam for 30 min till cooked with closed lid.
- Allow it to cool and then cut as shown(muthiya)
- Add 2-3 tbsp of oil in pan.Allow it to heat. Add cumins seed, hing, seasame seeds and green chillies. Then add muthiya in it and cook for few min. Serve it and enjoy.
